y the time my brother Brian and I got to Pheriche on the way to Everest Base Camp in Nepal, we were dying for a correctly-made grilled cheese on toasted, buttered bread. Why? Because when we tried to order one below Pheriche, we ended up with a variety of food items, none of which resembled an American-style grilled cheese sandwich. At one tea house, we received an omelette instead. But, when we reached the Himalayan Hotel in Pheriche, all of that changed. Their grilled cheese is perfect, and they pair it with a fantastic 1990s mix CD played in the restaurant. We’ve never loved a grilled cheese sandwich so much. The hotel also has an attractive sun room and clean rooms. WB
